Hi, my name is Katie Ross and like many
people these days I am on a strict gluten free diet.
This unfortunately means I cannot eat all those delicious
tasting wheat based breads and other yummy goodies.
At first I didn't realize just how many foods have gluten
in them, but slowly it dawned on me.
It Seemed Gluten Was
In Almost Everything!
It felt like I could no longer eat the things I loved.
Worst of all was bread. I longed for
the taste, the chewy texture, the delicious crusts,
the bread that I could eat fresh and not have to toast,
the bread that wasn't gummy and crumbly or something
in between, the bread that didn’t go hard and
stale as soon as it was opened.
So after spending countless hours trawling
through supermarket aisles and health food shops and
wasting a ton of money buying almost every gluten free
bread available and finding most of them to be average
at best - I decided to look into baking my very
own gluten free breads.
"I Soon Discovered
That Gluten Free Breads Were REALLY Difficult
To Make!"
I bought a few baking books and started trying to make
my own bread – but most of the recipes I found
in books or on the internet turned out pretty
horrible. Just like the breads from the stores,
mine were turning out heavy, crumbly and with a flavor
resembling something in between cardboard and wallboard!
So I began to research some more and began to buy some
of the more "exotic" flours and decided to
try my luck with these.
So surrounded by dozens of tiny flour packages - I found
all sorts of weird and wonderful "flour mixes"
on the internet but was soon wasting even more
money (these flours weren't cheap!) and the
results were still pretty ordinary.
I was disappointed, but I didn't give up!
I knew that there had to be an answer
so after more research still I stumbled upon a recipe
that looked a little different from the others I had
tried.
In fact I actually screwed up the directions
and didn’t follow the steps in the right order!
But wouldn’t you know it – that “mistake”
actually made my bread taste great!
I remember pulling it out of the oven
and looking at it thinking to myself - I must've put
wheat flour into the mix. The bread has risen, looked
golden and smelled delicious!
I knew I was onto something, so even before
it cooled down I cut into it eagerly to see what was
inside. Most of my other results had either been undercooked,
or really heavy...
But This Loaf Was Different!
Surprisingly it was soft and light
inside. The texture wasn’t moist
like most of my other attempts. And best of all it had
spring to it – it wasn’t crumbly
at all!
My first successful gluten free loaf
- light and fluffy with a crispy crust!
I had stumbled upon something...
Biting into it I found that it was absolutely delicious!
I went running to find my boyfriend (he's not on a gluten
free diet) and asked him to try out my bread.
"Not another one!" he said.
"No really try this one - its good" I replied
eagerly.
"That's what you said about the last 100!"
he said back.
But needless to say my boyfriend - my “guinea
pig” - tried it and looked at me funnily. "You've
put wheat flour into this haven't you?"
"I Had Done It!"
Finally after weeks of researching and countless disasters
I had made something that passed the test. I had managed
to replicate the taste, flavor and texture of wheat
bread.
And The Story Doesn't
End There...
You see I thought that like most gluten free breads,
the next day it would become dry and crumbly, so as
I put it into a zip lock bag and went to bed I thought
to myself that it didn't matter - at long last I could
finally enjoy fresh bread sandwiches again.
When I woke up the next morning I was pleasantly surprised.
While I have to admit it wasn't as good as when it first
came out of the oven - my bread still tasted pretty
good! It didn't even need to go into the toaster like
almost all my other gluten free breads did. I could
still make sandwiches the next day using my day-old
gluten free bread!

believe it!"
I decided to bake it again and make sure it wasn’t
some kind of accident. Sure enough it came out exactly
like the one two days earlier!
My second attempt - delicious AGAIN!
I decided to tweak my recipe and try it
out on some of my friends and family and they like my
boyfriend asked if I had put wheat flour into the mix.
They like my boyfriend weren’t on
a gluten free diet but had heard and witnessed my endless
struggle for gluten free bread that actually tasted
good. You should've seen the look on their faces
when I told them it was gluten free!
